Ingredients

12 servings
Maida (all-purpose flour, plain flour)2¼ cups
Cocoa powder (unsweetened cocoa powder)½ cup
Baking soda (bicarb soda, bicarbonate of soda)1¼ tsp
Salt½ tsp
Butter1 cup, soft, divided
Brown sugar1 cup
Egg1
Buttermilk1 cup
Vanilla essence (vanilla flavouring, imitation vanilla extract)1½ tsp
Marshmallows (gelatin free)for filling, melted, or marshmallow creme
Sugar1 cup powdered, for filling

Method

5 steps
  1. 1Heat oven to 180°C. Whisk flour, cocoa, soda and salt.
  2. 2Beat half the butter with brown sugar until fluffy, then the egg and vanilla. Add flour and buttermilk alternately.
  3. 3Scoop 24 mounds onto lined trays, 5 cm apart, and bake 10 to 12 minutes.
  4. 4For the filling, gently melt the marshmallows, cool slightly, then beat with the remaining butter, powdered sugar and a little vanilla until fluffy.
  5. 5Sandwich pairs of cooled cakes with a thick layer of filling.
Serve it like this

Stack on a plate or wrap individually in baking paper for lunchboxes. Serve with cold milk.
