Ingredients

4 servings
Curd (plain yogurt, natural yoghurt)1½ cups, slightly sour
Water chestnut flour (singhara atta)3 tbsp, or rajgira atta
Waterabout 1 1/2 cups
Ghee1 tbsp
Cumin seeds1 tsp
Dried red chilli1
Green chilli2, slit
Ginger1.5 cm, grated
Black pepper½ tsp, crushed
Coriander leaves (cilantro)a handful
Rock salt (sendha namak)to taste

Method

5 steps
  1. 1Whisk curd, singhara flour and water till completely smooth.
  2. 2Heat ghee, add cumin, red chilli, green chilli and ginger.
  3. 3Pour in the curd mix and stir constantly till it comes to a boil.
  4. 4Simmer on low, stirring now and then. Add pepper and rock salt.
  5. 5Finish with coriander and serve with samak rice.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
