Surti papdi (flat beans)250 g surti papdi, stringed
Green peas¾ cup fresh lilva tuvar or green peas
Elephant foot yam150 g purple yam (kand) or suran, cubed
Sweet potato1 medium, cubed

Brinjal (eggplant, aubergine)6 small brinjals, slit
Raw banana (green plantain)1, in thick pieces
Fenugreek leaves1 cup chopped, for the muthia
Besan (chickpea flour, gram flour)½ cup, for the muthia
Whole wheat flour (wholemeal atta flour, chapati flour)¼ cup coarse atta, for the muthia
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Fresh grated coconut½ cup
Coriander leaves (cilantro)1 big bunch
Green chilli4 to 5
Ginger2.5 cm
Garlica bunch of green garlic, or 8 cloves
Sesame seeds1 tbsp
Coriander powder (ground coriander)2 tsp
Turmeric (ground turmeric)¾ tsp
Sugar1 tbsp
Lemon juice1 tbsp
Ajwain (carom seeds)½ tsp

Cooking oil (vegetable oil)½ cup, plus a little to fry the muthia

Method
6 steps
1Make the muthia: mix the methi, besan, atta, a little ginger and chilli, a pinch each of sugar, salt and soda and 1 tbsp oil with a splash of water. Shape small fingers and shallow fry until golden.
2Coarsely grind the coconut, coriander, chilli, ginger, garlic, sesame, coriander powder, turmeric, sugar, lemon and salt.
3Stuff the brinjals and baby potatoes with some masala and toss the yam, sweet potato and banana in the rest.
4Heat the oil in a wide heavy pot, crackle the ajwain and asafoetida. Layer the papdi and lilva at the bottom, then the yam, sweet potato, potatoes, banana and brinjals. Sprinkle the water, cover tightly and cook on low without stirring. Shake the pot now and then.
5Tuck in the muthia, cover and cook 5 more minutes. Fold gently once.
6Serve with puri, and shrikhand or jalebi if it is a festive table.

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
