Horse gram1 cup, soaked overnight
Water6 cups
Tamarinda large lime sized ball
Cooking oil (vegetable oil)1½ tbsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Curry leavesa sprig
Onion1, finely chopped
Green chilli2, slit
Garlic4 cloves, crushed
Red chilli powder (indian red chili powder)1 tsp
Jaggery2 tsp
Salt1¼ tsp
Coriander leaves (cilantro)chopped
Fresh cream (thickened cream, heavy cream)2 tbsp, to serve, optionalMethod
- 1Pressure cook the soaked horse gram with 6 cups water for 7 whistles. Let pressure release naturally.
- 2Strain off the cooking water. Grind about half the gram to a paste and keep the rest for a dry curry.
- 3Simmer the stock with tamarind water and the gram paste, stirring often, for 45 to 60 minutes until thick.
- 4Temper mustard, cumin, curry leaves, onion, chilli and garlic in oil, add chilli powder, jaggery and salt, then stir into the pot. Simmer 5 minutes.
- 5Finish with coriander and serve with a swirl of cream if you like.
Serve it like thisServe hot over rice with a swirl of cream or ghee, raw onion slices and a green chilli on the side.
