Ingredients

4 servings
Fish4 white fish fillets, like basa, rawas or sea bass
Potato3, thinly sliced
Tomatocherry tomatoes
Black olivesa handful
Capers1 tbsp
Onion1 red onion, sliced
Garlic3 cloves, sliced
Olive oil2 tbsp
Lemon juice1 lemon
Dried oregano½ tsp
Dried red chillia pinch of flakes
Flat leaf parsleya handful
Saltto taste
Black pepperto taste

Method

4 steps
  1. 1Heat the oven to 210°C. Toss the potato slices with half the oil and salt, spread on a tray and roast until starting to colour.
  2. 2Scatter tomatoes, olives, capers, onion and garlic over the potatoes and lay the seasoned fish on top. Drizzle with the rest of the oil and lemon, sprinkle oregano and chilli.
  3. 3Bake until the fish turns opaque and flakes easily.
  4. 4Scatter parsley and serve with lemon.
Serve it like this

Serve a fillet on a bed of the potatoes and tomatoes, spoon over the pan juices and add lemon and crusty bread.
