Ingredients

Rice flour1¼ cups
Rava (semolina)⅓ cup
Tomato3 ripe tomatoes
Ginger1 tsp
Curd (plain yogurt, natural yoghurt)¼ cup
Cumin seeds½ tsp
Kashmiri chilli powder¼ tsp, for colour only
Salt1 tsp
Curry leavesa few, finely chopped
Coriander leaves (cilantro)1 tbsp, chopped
Waterabout 1 1/4 cups
Cooking oil (vegetable oil)2 tbsp, for cooking

Method

5 steps
  1. 1Blend the tomatoes and ginger to a smooth purée.
  2. 2Whisk the rice flour, rava, curd, salt, Kashmiri chilli and cumin with the purée and enough water for a thin batter. Rest 15 minutes.
  3. 3Stir in the curry leaves and coriander. Heat a cast iron tawa until a drop of water sizzles away.
  4. 4Pour the batter from the edge inward in a circle, filling gaps; do not spread. Drizzle with oil.
  5. 5Cook on medium until the underside is golden and the edges lift, about 3 minutes. Fold and serve.
Serve it like this

Fold into a half moon and serve with coconut chutney; older kids may like a little podi and ghee on the side.
