Ingredients

4 servings
Rice1 cup
Toor dal (split pigeon peas)½ cup
Water5½ cups
Tamarindsmall lemon size, as pulp
Sambar powder1½ tbsp
Drumstick (moringa pods)1, in pieces
Carrot1, cubed
Brinjal (eggplant, aubergine)2 small, cubed
Shallots8, peeled
Tomato1, chopped
Turmeric (ground turmeric)¼ tsp
Salt1½ tsp
Cooking oil (vegetable oil)2 tsp
Ghee1 tbsp
Mustard seeds½ tsp
Curry leaves1 sprig
Dried red chilli1
Asafoetidaa pinch
Coriander leaves (cilantro)1 tbsp

Method

4 steps
  1. 1Rinse rice and dal together. In the cooker heat oil, saute shallots and vegetables 2 minutes.
  2. 2Add rice, dal, tomato, turmeric, tamarind pulp, sambar powder, salt and water. Pressure cook for 4 whistles on medium. Let the pressure release naturally.
  3. 3Mash lightly and add hot water to loosen.
  4. 4Temper ghee with mustard, red chilli, curry leaves and asafoetida. Pour over and add coriander.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
