Ingredients

Thick coconut milk¾ cup thick
Thin coconut milk1⅔ cups thin
Moong dal (split yellow mung beans)¼ cup
Potato1 large, cubed
Carrot1, cubed
Green beans10, cut
Drumstick (moringa pods)1, in fingers
Shallots6, sliced
Green chilli3, slit
Ginger2.5 cm, chopped
Garlic3 cloves
Lemon juice1 lemon
Coconut oil2 tsp
Curry leavesa sprig
Turmeric (ground turmeric)a pinch
Saltto taste

Method

4 steps
  1. 1Cook moong dal with turmeric until soft and mash.
  2. 2Simmer vegetables, shallots, chillies, ginger and garlic in the thin coconut milk with salt until tender.
  3. 3Stir in the dal and then the thick coconut milk; heat gently without boiling.
  4. 4Turn off the heat and add lemon juice; temper curry leaves in coconut oil and pour over.
Serve it like this

Serve warm in a bowl over rice with ginger thuvaiyal and potato fry on the side.
