Ingredients

4 servings
Chana dal (split chickpeas)⅓ cup
Moong dal (split yellow mung beans)⅓ cup
Masoor dal (red lentils)⅓ cup
Turmeric (ground turmeric)½ tsp
Water3½ cups
Ghee1½ tbsp
Cumin seeds1 tsp
Garlic6 cloves, chopped
Ginger1.5 cm, chopped
Green chilli2, chopped
Tomato1 large, chopped
Red chilli powder (indian red chili powder)¾ tsp
Garam masala½ tsp
Dry mango powder½ tsp
Coriander leaves (cilantro)a handful

Method

4 steps
  1. 1Rinse all three dals together and soak 30 minutes.
  2. 2Pressure cook dals with water, turmeric, ginger and salt for 4 whistles. Let pressure release naturally and whisk.
  3. 3Heat ghee, crackle cumin, add garlic and chilli and fry until golden. Add tomato and chilli powder and cook until soft.
  4. 4Pour the tadka into the dal, simmer 3 minutes and finish with garam masala, amchur and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
