Ingredients

Duck800 g, curry cut
Onion2 large, sliced
Ginger2.5 cm
Garlic8 cloves
Green chilli3, slit
Coriander powder (ground coriander)1½ tbsp
Kashmiri chilli powder2 tsp
Turmeric (ground turmeric)¼ tsp
Black pepper1 tsp, crushed
Garam masala1 tsp
Thin coconut milk1⅔ cups
Thick coconut milk¾ cup
Potato2, cubed
Vinegar1 tbsp
Coconut oil2 tbsp
Curry leaves2 sprigs
Saltto taste

Method

5 steps
  1. 1Marinate the duck with turmeric, pepper and salt.
  2. 2Heat coconut oil, fry onion, ginger, garlic and chillies until soft and golden.
  3. 3Add the powders and fry briefly, then the duck. Sear until the skin colours.
  4. 4Add thin coconut milk and simmer covered until the duck is tender, adding potatoes halfway.
  5. 5Stir in thick coconut milk and vinegar, heat without boiling and finish with curry leaves.
Serve it like this

Serve warm in a wide bowl with lacy appams or idiyappam, curry leaves on top.
