Mutton (goat meat)750 g

Red chilli powder (indian red chili powder)1½ tbsp
Coriander powder (ground coriander)1½ tbsp
Turmeric (ground turmeric)½ tsp
Garam masala2½ tsp
Poppy seeds (white poppy seeds)2 tsp
Fresh grated coconut2 tbsp dry coconut
Curd (plain yogurt, natural yoghurt)¼ cup
Cooking oil (vegetable oil)4 tbsp
Curry leaves2 sprigs
Coriander leaves (cilantro)a handful
Water1⅔ cups

- 1Marinate mutton with curd, turmeric, chilli powder, half the ginger garlic paste and salt for 30 minutes.
- 2Roast poppy seeds and coconut; grind to a paste.
- 3Fry onions in oil until brown, add curry leaves, green chillies, remaining ginger garlic paste and coriander powder.
- 4Add mutton, sear, add water and pressure cook 6 whistles; let release naturally.
- 5Stir in poppy coconut paste and garam masala; simmer until oil floats. Add coriander.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
