Cream cheese900 g, at room temperature
Sugar1¼ cups
Egg5
Fresh cream (thickened cream, heavy cream)1⅔ cups
Maida (all-purpose flour, plain flour)3 tbsp
Salta pinch

Method

4 steps
  1. 1Line a 23 cm tin with two crumpled sheets of baking paper, letting them stand well above the rim.
  2. 2Beat cream cheese and sugar until smooth. Add eggs one at a time, then the cream, then sift in flour and salt.
  3. 3Pour into the tin and bake at 220 C until deeply browned on top and still very wobbly in the centre.
  4. 4Cool completely; it will sink. Chill a few hours for clean slices, or serve at room temperature for a gooey middle.
Serve it like this

Serve thick wedges on plates with the dark top showing, at room temperature for a gooey centre. Berries alongside.
