Ginger garlic paste2 tbsp
Kashmiri chilli powder1 tbsp
Garam masala1 tsp
Cumin powder (ground cumin)1 tsp
Coriander powder (ground coriander)1 tsp
Turmeric (ground turmeric)¼ tsp
Kasuri methi (dried fenugreek leaves)1 tsp, crushed
Mustard oil4 tsp
Butter1 tbsp, melted, to baste

- 1Cut deep slashes into the chicken down to the bone. Rub with half the lemon juice, a little salt and a pinch of chilli powder. Rest 20 minutes.
- 2Heat the mustard oil until it just smokes, then cool. Whisk with hung curd, ginger garlic paste, the spices, kasuri methi, remaining lemon and salt.
- 3Coat the chicken, working the paste into the cuts. Cover and refrigerate at least 4 hours, ideally overnight.
- 4Heat the oven to 240 C or the air fryer to 200 C. Place the chicken on a rack, shaking off excess.
- 5Roast for 20 to 25 minutes in the oven, or 18 to 20 in the air fryer, turning halfway.
- 6Baste with melted butter and roast or air fry 4 more minutes for char. Check the thickest part near the bone.
- 7Rest 5 minutes. Sprinkle chaat masala and serve with onion rings and lemon.
