Ingredients

6 servings
Masa harina3½ cups
Butter¼ cup, or lard
Cooking oil (vegetable oil)¼ cup
Baking powder1½ tsp
Water2½ cups warm stock
Saltto taste
Poblano pepper3, roasted and cut in strips
Onion1, sliced
Tomato2, chopped
Mozzarella200 g, Oaxaca cheese or mozzarella, in strips

Method

5 steps
  1. 1Soak corn husks (or cut banana leaves) in hot water for 30 minutes.
  2. 2Beat butter and oil until fluffy, then beat in masa harina, baking powder, salt and warm stock a little at a time.
  3. 3Sauté onion and roasted poblano strips with tomato and salt for 5 minutes.
  4. 4Spread 2 tbsp dough on each husk, add rajas and a strip of cheese, fold the sides over and tuck the tail up.
  5. 5Stand tamales upright in a steamer and steam for 60 minutes. Rest 10 minutes.
Serve it like this

Serve tamales in their husks on a platter for everyone to unwrap, with salsa verde and a mug of hot chocolate.
