Classic jam Swiss roll.

Ingredients

Egg4
Sugar½ cup plus extra for dusting
Maida (all-purpose flour, plain flour)¾ cup plus 1 tbsp
Baking powder½ tsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Fruit jam (jam or preserves)½ cup, mixed fruit or strawberry
Salta pinch

Method

5 steps
  1. 1Heat the oven to 190 C and line a 10 by 14 inch tray with greased baking paper.
  2. 2Whisk eggs and sugar for 8 minutes until thick and pale. Add vanilla, then fold in the sifted maida, baking powder and salt.
  3. 3Spread evenly in the tray and bake 9 to 10 minutes.
  4. 4Turn out onto baking paper dusted with sugar, peel off the lining and roll up from the short end while hot. Cool rolled.
  5. 5Unroll, spread with jam, roll up again and set seam side down. Trim the ends.
Serve it like this

Slice into rounds with a serrated knife and fan them on a plate with a dusting of sugar, with tea alongside.
