Chicken, curry cut (bone in chicken, small pieces)750 g, curry cut
Basmati rice2 cups, soaked 30 min
Curd (plain yogurt, natural yoghurt)¾ cup
Ginger5 cm, ground
Cashews3 tbsp, ground
Black pepper1 tsp, crushed
Whole spicesgreen cardamom, cloves, cinnamon, mace, bay leaves

Ghee3½ tbsp
Fresh cream (thickened cream, heavy cream)¼ cup
Milk⅓ cup
Saffrona pinch
Kewra watera few drops

Method
4 steps
1Marinate the chicken with curd, ginger, cashew paste, pepper, cardamom powder and salt for 1 hour.
2Cook the chicken in half the ghee with half the whole spices, covered, on low heat until cooked through with no pink at the bone and the gravy thick. Stir in cream.
3Boil the rice in salted water with the remaining whole spices until 70 percent done. Drain.
4Layer chicken and rice in a heavy pot. Top with saffron milk, kewra water, mint and remaining ghee. Seal and cook on very low heat for 20 minutes. Rest 10 minutes.
Serve it like this
Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
