Ingredients

6 servings
Butter1½ tbsp
Onion1 large, chopped
Carrot2, diced
Celery2 sticks, diced
Garlic3 cloves
Dried white peas2 cups dried split peas (or matar dal), rinsed
Cooked hamsmoked ham hock or diced ham
Chicken stock (chicken broth)6 cups, or water
Bay leaf (indian bay leaf)1
Dried thyme½ tsp
Salt1 tsp, adjust for the ham
Black pepper½ tsp

Method

4 steps
  1. 1Melt butter and cook onion, carrot, celery and garlic 8 minutes.
  2. 2Add split peas, ham, stock, bay leaf and thyme. Bring to a boil and skim.
  3. 3Simmer partly covered for 60 minutes, stirring now and then so nothing sticks.
  4. 4Lift out the ham, shred the meat and return it. Season; thin with water if needed.
Serve it like this

Serve thick in deep bowls with crunchy croutons or buttered rye toast, a crack of pepper on top. Hot.
