Minced beef (beef mince, beef or buff keema)beef mince, 80 percent lean, in 8 balls
Processed cheese (american cheese)4 slices American or processed cheese
Burger bun4 soft buns
Onion1, paper thin
Dill pickles (gherkins)pickle slices

Tomato ketchup (ketchup)1 tbsp
Prepared mustard2 tspMethod
- 1Mix mayo, ketchup, mustard and a little chopped pickle for burger sauce. Toast buttered buns cut side down.
- 2Heat a heavy cast iron pan or griddle until smoking.
- 3Place 2 beef balls in the pan, top with onion slices and smash flat with a sturdy spatula within 10 seconds. Season.
- 4Cook 90 seconds until the edges are deeply brown, scrape up, flip, add cheese and cook 30 seconds more.
- 5Stack two patties on each bun with pickles and sauce.
