Mutton (goat meat)650 g curry cut
Onion3 medium, sliced
Tomato3 medium, chopped
Ginger garlic paste2½ tbsp
Green chilli3, slit
Coriander leaves (cilantro)1 big bunch, chopped
Curd (plain yogurt, natural yoghurt)½ cup, whisked
Cooking oil (vegetable oil)3½ tbsp
Whole spicescloves, cinnamon, black cardamom
Bay leaf (indian bay leaf)2
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1½ tsp
Coriander powder (ground coriander)2 tsp
Garam masala¾ tsp

Waterabout 1/2 cupMethod
- 1Heat oil in a cooker, fry whole spices and bay leaf, then onions until golden.
- 2Add mutton and ginger garlic paste and sear on high, stirring, until the meat changes colour.
- 3Add tomatoes, curd, green chillies, half the coriander and the spice powders. Cook until the tomatoes collapse.
- 4Add salt and a splash of water. Pressure cook 6 whistles and let pressure release naturally.
- 5Reduce if needed, then finish with garam masala and the rest of the coriander.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
