Ingredients

12 servings
Cooking oil (vegetable oil)1 cup plus 2 tbsp
Dried red chilli1 cup, coarsely ground
Kashmiri chilli powder1 tbsp, for colour
Sesame seeds1½ tbsp
Salt¾ tsp
Sugar½ tsp
Sichuan peppercorn1 tbsp
Star anise2 pods
Bay leaf (indian bay leaf)2
Whole spices1 small cinnamon stick
Ginger4 thick slices
Spring onion (green onion, scallion)2 stalks, in lengths

Method

5 steps
  1. 1Mix the ground chilli, Kashmiri chilli, sesame, salt and sugar in a heatproof bowl.
  2. 2Warm the oil with the Sichuan pepper, star anise, bay, cinnamon, ginger and spring onion on low.
  3. 3Strain the oil and let it cool for a few minutes.
  4. 4Pour the oil over the chilli in two or three goes, stirring between each.
  5. 5Cool and jar. Rest overnight before using; keep in a cool dark place for up to a month.
Serve it like this

Spoon from a glass jar, stirring up the sediment, over dumplings, noodles, eggs or rice. A teaspoon goes a long way.
