Classic shufta.

Ingredients

6 servings
Paneercut in small cubes
Ghee2 tbsp
Almonds⅓ cup, blanched, halved
Walnuts⅓ cup, halved
Raisins3 tbsp
Dried apricot6, sliced
Dates6, sliced
Sugar⅓ cup
Honey1½ tbsp
Water½ cup
Cardamom½ tsp
Dry ginger powder (ground ginger)½ tsp
Black peppera pinch
Saffrona pinch

Method

4 steps
  1. 1Fry paneer cubes in ghee until golden, then soak in warm water 5 minutes and drain.
  2. 2In the same ghee, toss almonds and walnuts until lightly toasted.
  3. 3Add water, sugar, saffron, cardamom, dry ginger and pepper and boil to a thin syrup.
  4. 4Add paneer, dried fruits and nuts and simmer until glazed. Off the heat, stir in honey.
Serve it like this

Serve warm in small bowls with a little syrup, a few saffron strands on top.
