Ingredients

Salmon2 fillets, skin on
Salt1 tsp
Radish (daikon radish, mooli)5 cm piece, grated
Lemon2 wedges
Soy sauce1 tsp, for the radish

Method

4 steps
  1. 1Rub the salmon with salt and chill overnight or at least 1 hour.
  2. 2Pat dry and grill skin side up under a hot grill, or in a pan skin side down, 4 to 5 minutes.
  3. 3Turn and cook 2 to 3 minutes more until just cooked through.
  4. 4Serve with grated radish dressed with a drop of soy, and lemon.
