Ingredients

6 servings
White bread8 slices, halved into triangles
Ghee3 tbsp
Milk2½ cups
Fresh cream (thickened cream, heavy cream)⅓ cup
Saffrona pinch
Egg3
Sugar⅓ cup plus 1 tbsp
Cardamom¼ tsp
Kewra watera few drops
Raisins2 tbsp
Almonds2 tbsp, slivered
Pistachios2 tbsp, slivered

Method

6 steps
  1. 1Brush the bread with ghee and toast in a pan on medium heat for 2 minutes a side.
  2. 2Warm the milk and cream with the saffron on low heat for 5 minutes.
  3. 3Whisk the eggs, sugar, cardamom and kewra, then whisk in the warm milk.
  4. 4Overlap the bread in a greased baking dish, scatter the raisins and pour the custard over. Soak 15 minutes.
  5. 5Bake in the oven at 170°C for 35 minutes.
  6. 6Scatter the almonds and pistachios and rest 10 minutes before serving.
Serve it like this

Scoop a generous square into a warm bowl, crisp tips up. Pour a little cold rabri or cream around it and add a silver leaf if you have it.
