Chicken, bonelessboneless thighs, in bite size pieces

Egg1

Cornflour (cornstarch)½ cup

Maida (all-purpose flour, plain flour)¼ cup

Cooking oil (vegetable oil)for frying

Soy sauce2½ tbsp

Honey2 tbsp

Brown sugar2 tbsp

Rice vinegar4 tsp

Hoisin sauce1 tbsp

Garlic3 cloves

Ginger1 tbsp, grated

Sesame oil1 tsp

Sesame seeds1 tbsp, toasted

Water⅓ cup

Spring onion (green onion, scallion)2, sliced

Method

4 steps

1Toss chicken with egg, then with cornflour and flour until coated.
2Fry in 2 cm of hot oil in batches until golden and cooked through, 5 to 6 minutes. Drain.
3Simmer soy, honey, sugar, vinegar, hoisin, garlic, ginger and water until thick and glossy.
4Toss chicken in the sauce with sesame oil and seeds. Top with spring onion.

Serve it like this
