Ingredients

12 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Butter100 g base, 50 g filling
Sugar50 g base, 180 g filling
Egg yolk1, for base
Baking powder½ tsp
Quark (farmer's cheese, quark, or crumbled fresh chhena)1 kg twaróg, twice minced

Cornflour (cornstarch)3 tbsp potato starch or cornflour
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Lemonzest of 1
Raisins⅓ cup, optional

Method

4 steps
  1. 1Rub flour, butter, sugar, yolk and baking powder into a dough, press into a 26 cm tin and chill.
  2. 2Beat butter and sugar, add quark, eggs one by one, starch, vanilla and zest until smooth. Add raisins.
  3. 3Pour over the base and bake at 170 C for 1 hour.
  4. 4Turn off the oven and leave the cake inside with the door ajar to cool.
Serve it like this

Cut neat slices, dust with icing sugar and serve with tea.
