Ingredients

4 servings
Urad dal (split black gram)¾ cup, soaked 4 hours
Ginger2.5 cm
Green chilli2
Asafoetidaa pinch
Cooking oil (vegetable oil)for frying
Spinach2 bunches, blanched and pureed
Curd (plain yogurt, natural yoghurt)⅔ cup, whisked
Mustard oil1½ tbsp
Whole spicesbay leaf, cloves, black cardamom
Cumin seeds½ tsp
Turmeric (ground turmeric)¼ tsp
Coriander powder (ground coriander)2 tsp
Red chilli powder (indian red chili powder)½ tsp
Garam masala½ tsp
Saltto taste
Water¾ cup

Method

4 steps
  1. 1Grind the soaked urad dal with ginger, green chilli, asafoetida and salt to a thick paste. Steam in a greased plate for 20 minutes. Cool and cut into cubes.
  2. 2Shallow fry the cubes until golden.
  3. 3Heat mustard oil until it smokes, cool slightly, add whole spices and cumin, then the powders and spinach puree. Cook 5 minutes.
  4. 4Lower heat, stir in curd and water, stirring until it boils. Add the vadis and simmer 8 minutes. Finish with garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
