Rice1½ cups, soaked 20 min
Masoor dal (red lentils)½ cup whole masoor, soaked 1 hour
Potato1 large, cubed
Onion1 large, sliced
Tomato2 medium, chopped
Curd (plain yogurt, natural yoghurt)½ cup
Mustard oil3 tbsp
Whole spicesbay leaf, black cardamom, cloves, cinnamon
Cumin seeds1 tsp
Ginger garlic paste1½ tbsp
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)¾ tsp
Coriander powder (ground coriander)2 tsp
Garam masala1 tsp
Water3¼ cups

- 1Heat mustard oil until it smokes and cool slightly. Add whole spices and cumin, then the onion, and fry until golden.
- 2Add ginger garlic paste, potatoes and the drained masoor. Fry 3 minutes, then add tomatoes, curd and powders and cook until oil separates.
- 3Add water and salt and simmer until the masoor is half cooked, about 15 minutes.
- 4Add the drained rice, bring to a boil, cover and cook on very low heat for 15 minutes. Rest 5 minutes and finish with garam masala and lemon.
Serve it like thisFluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
