Ingredients

4 servings
Colocasia (taro root, eddoes)400 g arbi, boiled and peeled
Turmeric (ground turmeric)½ tsp
Saltto taste
Mustard oil2½ tbsp
Panch phoron½ tsp pancha phutana
Dried red chilli2
Mustard paste2 tbsp
Garlic4 cloves, ground with the mustard
Green chilli2, slit
Tomato1, chopped
Water¾ cup

Method

4 steps
  1. 1Boil the colocasia until just tender, peel and halve. Rub with turmeric and salt.
  2. 2Lightly fry the colocasia in mustard oil until golden at the edges. Lift out.
  3. 3Temper pancha phutana and dried chillies, add tomato and cook soft. Add the mustard garlic paste with water and salt.
  4. 4Add the colocasia and chillies and simmer until the sauce coats them.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
