Ingredients

Raw papaya (green papaya)a wedge, cubed
Potato1 medium, cubed
Brinjal (eggplant, aubergine)1 small, cubed
Pumpkina wedge, cubed
Raw banana (green plantain)1, cubed
Green beansa handful, cut
Garlic4 cloves, crushed
Green chilli3, slit
Dried red chilli2
Panch phoron1 tsp
Turmeric (ground turmeric)½ tsp
Mustard oil1 tbsp
Saltto taste
Water1¼ cups

Method

4 steps
  1. 1Put all the vegetables in a pot with the water, turmeric, salt and green chillies. Boil until just tender.
  2. 2Heat the mustard oil in a small pan until it smokes. Add the panch phoron, dried chillies and garlic.
  3. 3Pour the tempering into the vegetables and simmer 3 to 4 minutes. Press a few pieces of pumpkin and potato against the side of the pot.
  4. 4Serve warm with rice and dal.

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
