Sabudana (tapioca pearls)1 cup
Peanuts½ cup, roasted and coarsely crushed
Potato1 medium, boiled and cubed
Ghee2 tbsp
Cumin seeds1 tsp
Green chilli2, chopped
Curry leavesa few, optional
Sugar2 tsp
Rock salt (sendha namak)to taste (sendha namak)
Lemon juice2 tsp
Coriander leaves (cilantro)a handful, choppedMethod
- 1Rinse the sabudana two or three times until the water runs almost clear. Soak in just enough water to cover it, 6 hours or overnight.
- 2Drain any water left, then mix in the crushed peanuts, salt and sugar with your fingers.
- 3Heat the ghee and add cumin. When it sizzles, add green chilli, curry leaves and the potato cubes. Fry until the potato edges colour.
- 4Add the sabudana mix and stir gently on low heat. Cover for a minute, stir, and repeat.
- 5Switch off, add lemon juice and coriander, toss and serve hot.
