Ingredients

4 servings
Poblano pepper6 poblanos (or green capsicums plus 1 green chilli)
Onion1 large, sliced
Garlic2 cloves
Sweet corn kernels (corn kernels)1½ cups kernels
Fresh cream (thickened cream, heavy cream)200 ml crema or fresh cream
Queso fresco⅔ cup, or mozzarella
Cooking oil (vegetable oil)1 tbsp
Saltto taste

Method

4 steps
  1. 1Char the poblanos over a flame or under a grill until black all over. Sweat in a covered bowl 10 minutes.
  2. 2Peel, seed and cut into strips (rajas).
  3. 3Fry the onion in oil until soft, add garlic, then the corn and rajas for 3 minutes.
  4. 4Stir in the cream and salt and simmer 3 minutes, then add the cheese until just melting.
Serve it like this

Spoon into warm corn tortillas or serve in a bowl with rice and beans, with salsa roja on the side.
