Ingredients

6 servings
Prawns (shrimp)500 g small prawns, cleaned
Dried red chilli12 Kashmiri dried chillies
Garlic10 cloves
Ginger2.5 cm
Cumin seeds1 tsp
Whole spices6 cloves, 1 inch cinnamon
Turmeric (ground turmeric)½ tsp
Vinegar½ cup
Sugar1½ tbsp
Onion2 medium, finely chopped
Tomato1 medium, chopped
Cooking oil (vegetable oil)4 tbsp

Method

4 steps
  1. 1Salt the prawns and fry them briefly in 1 tbsp oil until they just turn pink. Set aside.
  2. 2Soak the chillies in vinegar, then grind with garlic, ginger, cumin, cloves, cinnamon and turmeric.
  3. 3Heat the rest of the oil, cook onions until golden, add tomato and cook until soft, then add the paste and fry until oil separates.
  4. 4Add the prawns, sugar and salt and cook 5 minutes until thick. Cool and store in a clean jar. It keeps for several days in the fridge.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
