Ingredients

Pork750 g, cubed
Onion2, sliced
Shallots5
Ginger garlic paste2 tbsp
Coriander powder (ground coriander)1½ tbsp
Kashmiri chilli powder1 tbsp
Black pepper2 tsp
Garam masala1 tsp
Turmeric (ground turmeric)¼ tsp
Fresh grated coconutcoconut slivers
Vinegar2 tsp
Coconut oil1½ tbsp
Curry leaves2 sprigs
Saltto taste

Method

4 steps
  1. 1Mix pork with half the powders, ginger garlic, vinegar and salt; pressure cook for 3 whistles without water. Let the pressure release naturally.
  2. 2Fry coconut slivers in coconut oil until golden; add onion, shallots and curry leaves and fry well.
  3. 3Add the rest of the powders, then the pork and its juices; roast on low until dry and dark.
  4. 4Finish with crushed pepper and more curry leaves.
Serve it like this

Serve hot on a plate with appam, porotta or rice, garnished with curry leaves.
