Ingredients

Porkpork tenderloin, in 4 pieces
Maida (all-purpose flour, plain flour)½ cup
Egg2
Milk¼ cup
Water crackerssaltine crackers, finely crushed
Breadcrumbs½ cup
Salt1 tsp
Black pepper½ tsp
Cooking oil (vegetable oil)for shallow frying
Burger bun4 soft buns
Dill pickles (gherkins)pickle slices
Onionraw, sliced
Prepared mustardyellow mustard
Lettuceshredded

Method

4 steps
  1. 1Butterfly each piece of tenderloin and pound between plastic until 5 mm thick and much wider than a bun.
  2. 2Season, dredge in flour, dip in egg beaten with milk, then press into the mixed cracker and breadcrumbs.
  3. 3Shallow fry 2 to 3 minutes a side until golden and cooked through.
  4. 4Drain and set on a bun with mustard, pickles, onion and lettuce.
Serve it like this

Serve on a plate with the cutlet hanging over the bun, mustard and pickles on top. Fries and coleslaw alongside.
