Ingredients

5 servings
Pork750 g, cubed with fat
Dried red chilli12 byadgi
Coriander seeds1½ tbsp
Cumin seeds1 tsp
Black pepper1½ tsp
Whole spicescinnamon, cloves
Turmeric (ground turmeric)½ tsp
Onion2 medium
Ginger4 cm
Garlic8 cloves
Green chilli2
Vinegar2 tbsp
Tamarinda small piece
Cooking oil (vegetable oil)2 tsp
Water1¼ cups
Saltto taste

Method

5 steps
  1. 1Roast chillies, coriander, cumin, pepper and whole spices; grind to bafat powder with turmeric.
  2. 2Grind half the onion, ginger, garlic and tamarind with the powder and vinegar to a paste.
  3. 3Marinate pork in the paste for 1 hour.
  4. 4Fry remaining onion in oil, add pork, green chillies and water. Pressure cook 4 whistles; let release naturally.
  5. 5Simmer uncovered until thick.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
