Poondu kuzhambu, Tamil home style.

Ingredients

4 servings
Garlicabout 25 cloves, peeled
Shallots10, peeled
Tamarinda big lemon sized ball
Water2 cups
Tomato1 small, chopped
Sambar powder1½ tbsp
Turmeric (ground turmeric)¼ tsp
Sesame oil3 tbsp
Mustard seeds½ tsp
Fenugreek seeds½ tsp
Curry leaves2 sprigs
Jaggery1½ tsp
Saltto taste

Method

4 steps
  1. 1Soak tamarind in warm water and squeeze out 2 cups of thin extract.
  2. 2Heat sesame oil, splutter mustard and fenugreek, add curry leaves, then garlic and shallots. Fry on low until golden.
  3. 3Add tomato, turmeric and sambar powder; stir a minute, then pour in tamarind extract and salt.
  4. 4Simmer uncovered until thick and oil floats on top. Stir in jaggery at the end.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
