Lamb (lamb or tender mutton)600 g on the bone, chunks
Chickpeas, dry½ cup, soaked overnight
Onion1 medium, chopped
Potato2 small, halved
Tomato1, quartered
Aloo bukhara (dried sour plums or prunes)6 dried sour plums
Saffrona pinch, steeped
Waterabout 5 cups
Saltto taste
Black pepper½ tsp
Mint leaves1 tsp dried
Whole wheat bread (wholemeal bread)flatbread or bread, torn
Sumacto sprinkle

Method

4 steps
  1. 1Put lamb, chickpeas, onion and water in a clay pot or heavy pot, bring to a simmer and skim.
  2. 2Cover and cook on the lowest heat or in a 160°C oven.
  3. 3Add potatoes, tomato, plums, saffron, salt and pepper and cook until the potatoes are tender.
  4. 4Serve in two stages: pour the broth over torn bread in a bowl, sprinkle with sumac and mint and eat; then serve the meat, chickpeas and potatoes, sprinkled with sumac.
