Ingredients

6 servings
Pineapple2 cups, chopped
Fresh grated coconut½ cup
Curd (plain yogurt, natural yoghurt)1 cup
Green chilli1
Mustard seeds1 tsp, half for the paste
Turmeric (ground turmeric)¼ tsp
Jaggery1 tbsp
Salt¾ tsp
Water½ cup
Coconut oil2 tsp
Curry leaves1 sprig
Dried red chilli1

Method

4 steps
  1. 1Cook pineapple with turmeric, salt, jaggery and water till soft.
  2. 2Grind coconut, green chilli and half the mustard seeds to a paste.
  3. 3Add the paste and cook 2 minutes, then turn off the heat and stir in the curd.
  4. 4Temper coconut oil with mustard, red chilli and curry leaves. Pour over.
Serve it like this

Toss just before serving and bring it to the table cold, so it stays crisp.
