Ingredients

5 servings
Adzuki beans1¼ cups
Water8 cups
Glutinous rice flour (sweet rice flour)1 cup
Salt1 tsp
Sugar1½ tbsp (optional)
Rice¼ cup short grain, soaked

Method

5 steps
  1. 1Boil the beans 5 minutes, drain and discard the water.
  2. 2Simmer beans in fresh water for 70 minutes until very soft.
  3. 3Blend the beans with their liquid and push through a sieve; add the soaked rice and simmer 20 minutes.
  4. 4Knead the glutinous rice flour with hot water and a pinch of salt and roll into small balls.
  5. 5Drop in the balls and cook until they float, then season with salt and sugar.
Serve it like this

Serve hot in a deep bowl with the rice balls on top, a little sugar or salt on the table and dongchimi alongside.
