Ingredients

4 servings
Pasta320 g farfalle or penne
Smoked salmon150 g, in strips
Fresh cream (thickened cream, heavy cream)⅔ cup
Butter1 tbsp
Shallots2, finely chopped
Lemon juicezest and juice of 1/2 lemon
Dill leaveschopped (or parsley)
Black pepperto taste
Saltto taste

Method

4 steps
  1. 1Soften shallots in butter.
  2. 2Add cream and simmer gently to thicken slightly.
  3. 3Add half the salmon and lemon zest.
  4. 4Toss with the al dente pasta and a splash of pasta water, then add remaining salmon, lemon juice and dill.
Serve it like this

Serve in warm bowls topped with a few curls of salmon, dill and lemon zest.
