Classic parwal ki mithai.

Ingredients

6 servings
Pointed gourd12 large parwal
Baking soda (bicarb soda, bicarbonate of soda)a pinch, for blanching
Sugar1¼ cups
Water2 cups
Khoa¾ cup, grated
Pistachios1½ tbsp, chopped
Almonds1½ tbsp, chopped
Cardamom¼ tsp
Saffrona few strands

Method

4 steps
  1. 1Peel parwal lightly, slit lengthwise and scoop out the seeds. Blanch in water with soda for 5 minutes and drain.
  2. 2Simmer the shells in 220 g sugar and the water for 15 minutes, then soak 1 hour.
  3. 3Roast khoa with remaining sugar, cardamom and half the nuts until it holds. Cool.
  4. 4Drain the parwal, stuff with khoa and garnish with nuts and saffron.
Serve it like this
