Ingredients
Toor dal (split pigeon peas)⅓ cup
Chana dal (split chickpeas)⅓ cup
Dried red chilli4
Fennel seeds1 tsp
Fresh grated coconut2 tbsp
Shallots12, chopped
Curry leaves3 sprigs
Tomato1 medium
Tamarinda lemon sized ball
Water2½ cups
Sambar powder1½ tbsp
Turmeric (ground turmeric)¼ tsp
Sesame oil2 tbsp
Mustard seeds½ tsp
Fenugreek seeds¼ tsp
Saltto taste
Method
5 steps
1Soak both dals 2 hours. Grind coarsely with red chillies, fennel and salt without water. Mix in coconut, a third of the shallots and some curry leaves.
2Shape into lime sized balls and steam 10 minutes.
3Heat sesame oil, temper mustard and fenugreek, fry remaining shallots and curry leaves, add tomato and cook soft.
4Add tamarind extract, sambar powder, turmeric, salt and water. Boil until the raw smell goes.
5Slide in the steamed balls and simmer 10 minutes without stirring hard.
Serve it like this
Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
