Toor dal (split pigeon peas)½ cup
Tamarinda lemon sized ball, soaked
Tomato1 large, chopped
Onion1 medium, sliced
Green chilli3, slit
Drumstick (moringa pods)1, cut into fingers
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)1 tsp
Jaggerya small piece
Salt1½ tsp
Water3½ cups, divided
Cooking oil (vegetable oil)1 tbsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Fenugreek seedsa pinch

- 1Pressure cook the toor dal with turmeric and 1 1/2 cups water for 4 whistles. Let the pressure release naturally, then mash smooth.
- 2Extract the tamarind in 1 cup water. Boil it with the onion, tomato, green chillies, drumstick, chilli powder and salt.
- 3Add the mashed dal, the remaining water and the jaggery. Simmer gently.
- 4Heat the oil. Add mustard, cumin, fenugreek, red chillies, garlic, curry leaves and asafoetida. Pour into the charu.
- 5Add coriander, cover for 2 minutes and serve hot with rice.
