Ingredients

4 servings
Rice1¼ cups sona masoori, soaked 15 minutes
Spinach1 large bunch
Onion1 small, sliced
Green chilli1
Ginger garlic paste1½ tsp
Whole spices1 bay leaf, 2 cloves, cinnamon
Cumin seeds½ tsp
Green peas⅓ cup
Garam masala½ tsp
Ghee1½ tbsp
Cashews6 to 8
Salt1¼ tsp
Water2 cups
Lemon juice2 tsp

Method

4 steps
  1. 1Blanch spinach 1 minute in boiling water, cool in cold water and blend with the green chilli.
  2. 2Heat ghee in the cooker, fry cashews, then cumin, whole spices, onion and ginger garlic paste.
  3. 3Add peas, rice, spinach puree, garam masala, salt and water. Pressure cook for 2 whistles on medium. Let the pressure release naturally.
  4. 4Add lemon juice and fluff gently.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
