Ingredients

4 servings
Curd (plain yogurt, natural yoghurt)1¼ cups, whisked thin, or kefir
Egg1
Sugar2 tbsp
Salta pinch
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Maida (all-purpose flour, plain flour)1⅔ cups
Cooking oil (vegetable oil)for shallow frying (about 3 tbsp absorbed)
Sour cream½ cup, to serve
Fruit jam (jam or preserves)3 tbsp, to serve

Method

5 steps
  1. 1Warm the curd gently until just lukewarm, then whisk in the egg, sugar and salt.
  2. 2Whisk in the baking soda. Leave 2 minutes, then stir in the maida until you have a thick batter. Rest 10 minutes.
  3. 3Heat a thin layer of oil in a heavy pan on medium. Drop heaped tablespoons of batter, spaced apart, without stirring the batter much.
  4. 4Fry 2 minutes until the bottom is golden and the tops show bubbles. Flip and fry 1 1/2 minutes more. Drain on kitchen paper.
  5. 5Serve warm, piled up, with sour cream and jam.
