Ingredients

Elephant foot yam500 g suran, peeled and cubed
Tamarinda small lump
Turmeric (ground turmeric)1 tsp
Saltto taste
Mustard oil3 tbsp
Cumin seeds½ tsp
Bay leaf (indian bay leaf)2
Onion1 large, chopped
Ginger garlic paste1 tbsp
Tomato1 large, chopped
Kashmiri chilli powder1½ tsp
Coriander powder (ground coriander)1½ tsp
Cumin powder (ground cumin)1 tsp
Water1 cup
Garam masala½ tsp

Method

4 steps
  1. 1Wearing gloves or with oiled hands, peel and cube the yam. Boil with tamarind, turmeric and salt until just tender. Drain.
  2. 2Fry the yam cubes in mustard oil until golden. Lift out.
  3. 3In the same oil add cumin and bay leaves, then onion. Fry until golden, then add ginger garlic paste, tomato and the powdered spices. Cook until oil separates.
  4. 4Add the yam and water. Simmer until the masala coats the cubes. Finish with garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
