Ingredients

2 servings
Short grain rice (sushi rice)½ cup
Water3¾ cups
Salt⅓ tsp
Spring onion (green onion, scallion)1, sliced
Sesame seeds1 tsp, toasted
Nori sheets½ sheet, cut
Soy sauce1½ tsp, to drizzle

Method

4 steps
  1. 1Rinse the rice until the water runs nearly clear, then soak 20 minutes if you can.
  2. 2Bring rice and water to a boil in a heavy pot, then cover with the lid slightly ajar and simmer on low 30 to 35 minutes. Do not stir much.
  3. 3Season with salt, rest 5 minutes and ladle into bowls.
  4. 4Top with spring onion, sesame, nori and a little soy.
Serve it like this

Serve in deep rice bowls with toppings scattered over, a small dish of pickles and a pot of green tea on the side.
