Rice noodles400 g thin rice noodles
Fishwhite fish fillets
Lemongrass3 stalks, sliced
Galangala thumb
Turmeric (ground turmeric)1½ tsp
Kaffir lime leaves (makrut lime leaves)4
Garlic4 cloves
Shallots3
Thin coconut milk1⅔ cups
Thick coconut milk½ cup
Fish sauce2 tbsp
Jaggery2 tsp
Shrimp paste1 tsp, or prahok
Water2½ cups
Cucumber1, julienned
Moong sprouts (mung bean sprouts)bean sprouts
Banana flowerbanana blossom, finely shredded
Green beanslong beans, sliced
Basil leavesa handful
Mint leavesa handful

Method

5 steps
  1. 1Grind lemongrass, galangal, turmeric, lime leaves, garlic and shallots into kroeung.
  2. 2Poach the fish in the water until cooked, lift out and pound or mash finely. Keep the water.
  3. 3Simmer the kroeung in thin coconut milk and the fish water, then add the fish, fish sauce, jaggery and shrimp paste for 10 minutes.
  4. 4Stir in thick coconut milk and warm through.
  5. 5Cook noodles, rinse and coil into bowls. Pour over the gravy and pile on the raw vegetables and herbs.
Serve it like this

Coil noodles in a bowl, ladle over the gravy and heap cucumber, sprouts, banana blossom, beans and herbs on top. Serve warm.
