Ingredients

6 servings
Bitter leaf400 g washed bitter leaves (frozen ndolé works)
Peanuts2 cups raw peanuts, boiled and ground
Beef500 g, cubed
Prawns (shrimp)300 g
Dried shrimp¼ cup, ground
Onion2, half blended, half sliced
Garlic5 cloves
Gingerthumb
Cooking oil (vegetable oil)4 tbsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1
Stock cube (bouillon cube)1 cube

Method

4 steps
  1. 1Boil the beef with blended onion, garlic, ginger, stock cube and salt until tender.
  2. 2Boil the peanuts for 10 minutes, drain and blend to a smooth paste with water. Add to the beef and simmer, stirring.
  3. 3Add the bitter leaves and dried shrimp and simmer 15 minutes.
  4. 4Fry the prawns and sliced onion in oil, then fold them into the pot with the oil.
Serve it like this

Spoon into a wide bowl with prawns on top and serve with fried plantain or cassava sticks.
