Classic ndambe.

Ingredients

4 servings
Lobia, dry (dried black eyed peas)1½ cups black eyed beans, soaked
Onion1 large, sliced
Tomato puree2 tbsp tomato paste
Tomato2, chopped
Cooking oil (vegetable oil)3½ tbsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, whole or chopped
Garlic3 cloves
Stock cube (bouillon cube)½ cube
Black pepper½ tsp
Waterfor cooking
Baguette (french bread roll)1 large baguette, in 4 pieces

Method

4 steps
  1. 1Boil the beans until soft.
  2. 2Fry onions in oil until golden, add garlic, tomato paste, tomatoes and pepper and fry until thick.
  3. 3Add the beans, stock cube and a little cooking water and simmer until thick and partly mashed.
  4. 4Split the baguette pieces and fill generously.
Serve it like this

Wrap the stuffed baguette in paper and serve warm, with extra hot sauce on the side.
